Kale and Cranberry Salad

One of my favorite salads right now is this Kale and Cranberry Salad.

Made with fresh kale, dried cranberries, sunflower seeds, avocado, broccoli, golden raisins, fresh cilantro and homemade vinaigrette dressing.

Yes, I’m on the Kale Krazzze! Kale is the most popular green to eat these days.

And there’s a darn good reason. Kale is a super green that is low in calories, high in fiber and has ZERO fat.


Kale is also filled with powerful antioxidants, vitamin A and K, iron, and calcium. SOoOo… why not embrace this yummy, fluffy-looking green?!?

This salad can easily be made in advance (leave the dressing on the side) so you can take it to work for lunch or have it for dinner later.


Making this Super Green Salad

1. Rinse your kale and cut into bite-size pieces.

2. Lay out a bed of kale on your plate. Top with chopped broccoli and cilantro. Sprinkle sunflower seeds, golden raisins, almonds and dried cranberries over salad.


3. Spoon out fresh avocado slices onto salad. Season salad with sea salt, black pepper, olive oil and balsamic vinegar. Mix together and enjoy immediately.
